Natural Winter Stratification

I have about 8 varieties of seeds that need cold strat to germinate. I want to do it naturally this time/winter.

Im a bit confuse on how to proceed.

I have access to a 6x10 feet garden space and a grow box of 3x3 feet.

My question is, how do you proceed. Do you plant your seed in autumn, cover with a little soil and let nature do it ? or would you suggest another method for strat and sowing ?

well just put the seeds under about an inch of soil, and let it go. just curious what seeds are they? oh and also depending on what your winter temperatures? i just put mine in soil in a freezer for 2 weeks and then take em out and let nature do the rest. beats leaving them in the fridge all winter.

I have :

Korean Hornbeam
Cotoneaster Horizontalis
Trident Maple x 2 sources of seed
Japanese Maple Atropurpureum
Japanase Maple green x2 sources of seed.
Zelkova Serrata

My winter temp is low. Im at the border of zone 4 and 5.

If it does not get cold enough to properly stratify the seeds will they sprout when it gets significantly warmer?
