Layering

Sooo here it is, the last week of August, in Zone 5b/6a. I have several layers in the works that I would like an opinion on. The opinion is, should I remove the layer now or wait...wait till later this fall or allow to overwinter.
1- Flowering Quince....air layer has roots, started July 7th from potted tree. Do I remove it now or give it another week or two to grow!
2- Apple.......air layer of a full size tree... roots unknown..layer started July 25th.. remove, wait a bit, allow to overwinter(is this possible?)
3-Azelia ground layer (long branch brought down, scored, and covered with soil in garden. I am inclined to leave this till next spring, OK?
4- Crabapple...same as 3 above.

What is the common wisdom on these layers

The common wisdom is to wait until the white roots darken a bit, indicating they are maturing, and to be sure you have more than enough roots to sustain the layer when it is separated.

(But that is in the ***FAQ*** on Air Layering)

By the time the layer is ready to separate, the bag should be filled with roots that have matured from a pure whitish color to a darker appearance. The branch itself should have grown somewhat, indicating that the roots are functioning properly.
The ideal time to separate the layer is the same as repotting; early fall through late winter

First - let me say that this is not a problem in my neck of the woods - at least not very often. I am wondering if you need to be concerned about those roots freezing over the winter?? Not sure exactly how cold it gets where you live...maybe you can protect them somehow if you decide to leave them.
