A small, cool white fluorescent tube would be best, as they dont get too hot. Remember to switch it off in the night, simulating day/night. Junipers come from dry, arid environments which can get pretty cold at night and very hot in the day. They're pretty tough, but I kept one on a windowsill when i started bonsai and it lasted exactly 2 weeks. If you can't find a place to keep it outdoors and it does die, don't be put off, just get a species that is suited to indoors cultivation

I've never simulated winter for a temperate tree by placing it in a fridge, so I can't give any advice or relay any personal experience. I can tell you that most fridges maintain a temperature in the mid to upper 30's F, plus or minus a few degrees. That is enough to induce and maintain dormancy, where your tree will need little or no light. I would be more concerned about watering needs, which I can't anticipate but suspect will be a bit tricky. Too little and the tree dries out...too much and the roots rot and mold/fungal issues develop. I guess you have nothing to lose. Please let us know how things turn out.
