One more try at this so you might be able to actually see it. If not I will stop.

Hi,

Both the maple and cottoneaster look like they just need some more growing before you would want to do any training.I would let the cottoneaster free grow for at least another full year then use it for a mini or shohin bonsai,it will be good for this as they have small foliage. The maple will need a few years to put on some girth before you really can do anything with it.

Posting the maple was a mistake. I don't intend to even try to use it for bonsai it is just a nice maple for a container or the garden. The color contrast at the graft union would keep it from ever being good for bonsai.

The maple also looks like a graft. You will want to get this tree back on its own rootstock. In the spring start an airlayer at the graft point. Within 3-4 weeks there will be sufficient new roots to separate the two. If you are lucky, you can get create a twin trunk with this tree.

After you remove the layer, leave the tree to grow in a large container or the ground for a few years to develop a good sized trunk.

All the best,

Aaron

Aaron, was your response about the maple to airlayer it just because you would airlayer it regardless as to what you were going to use it for? As I had mention above, posting it here was a mistake. I have never intended to use it for bonsai.
