When to trim Maple?

That sounds like a good plan to me. There is definitely still a danger/certainty of freezing temps and will be for at least another few weeks.

I think that I will do some pruning now though so that once the sap does start flowing, its not wasted on parts of the tree that are not wanted.

re Acer

One thing all should consider is that Acer palmatum is a moutain tree, and as such is salt sensitive. Treating your maples to a tablespoon of gypsum once a year will improve their growth. Particularly if you are using commercial fertilizer.
