Surinam Cherry

hello everyone i have this surinam cherry i bought about 2 years ago, and over the winter i think the entire top of this tree died. It is getting sprouts toward the bottom of the trunk and i was wondering if anyone had any idea as to when i should chop this plant back to the new growth that is beginning. I am sure it should be done in steps and not all at once, but not sure when would be the best time. Or should i just let it grow for awhile then chop.. Thanks in advance

I have 300 feet of surinam cherry hedge, some new (5 years old) and some very old (25 years old). When the older stuff gets out of control (it's a tree not a hedge plant) I cut it off low. It sprouts all over the place and shows no harm for the chop. I have removed all of the growth above ground and had it grow back no problem.

Keep in mind this is in the ground. I believe you could expect similar results, though less vigorous in a pot or container.

I have a few I am coddling on as bonsai in the future but they are all from seed - I have so many sprout up I started digging the more interesting ones and potting them up. I believe they could make a nice medium sized bonsai as the leaves will reduce in a season.
