I have a small Olive
Not a great specimen but after some growing and radical 'butchering'(my partner's name for pruning) I might have a potensai.
Any tips on growing these-some sites say they are tender yet on the box, from Dutch supplier PatioPlants, it has a temperature indicator saying -10șC

Never heard that before Carl! So what do you recommend for this baby tree? I dont want a big bonsai, somewhere in the region of 8 inches to a foot in height. I was initially thinking informal upright with one of the branches forming the first branch, and the other growing up as a leader. May also consider semi cascade, not sure yet, has a lot of growing to do!
I will plant it in a deepish pot so it can grow away and get some good growth on it. Heres a basic virtual.

Larry,
To get back on track, you need to develop lots of branches and ramification on this little bugger. You can do that by cutting back the two branches to the first pair of leaves. This stimulates two new branches on each side. After letting the new branches grow to a few pairs, again cut it back to the first pair of leaves. Once you developed some branching, you should let the tree grow for a while in a larger box, to gain some volume. Leaving the low branches grow freely, while keeping short the top ones, will help developing taper. I have lots of olives, and they are very easy trees to work with.
