Advice Collecting Large Rosemary

I have heard that rosemary is notoriously difficult to collect so any advice is welcome.

The tree is the prostrate variety, about as large as an office desk and with a trunk as large as my forearm (see pictures below). Our night-time temperatures are between 48-55° F.

Has anyone developed a successful way to collect large rosemary shrubs?

They are very hardy and adapt so well to pot life that it is difficult to keep it shaped. I am always catching my wife sneaking sprigs off it to use in her cooking, so the plant serves a double purpose in my collection. Good luck.
