Huh? Pre-Bonsai False Cypress

Hi all!

I've got this False Cypress (I think anyway) shrub growing out in what is going to be the Bonsai Garden. From the info I could gather, the little guy is 8 years old...it was planted long before we moved in.
For a couple of years now, I've been thinking that this would make a great bonsai, but I really haven't got the first clue on what to do with it.

I know for sure that I'd very much like to leave it in the ground for as long as I can, but prune it and train it Bonsai style. Maybe in another two years I'll dig it up and put it in a pot, but for now, I could really use some advice.

And yes, that grey thing in the background is my very naughty cat Pandora.

Which brings me to another question. Pandora, among other neighbourhood cats, really like to use this garden as their personal litter box and I'm forever out there sifting out junk. I imagine that this would play royal havoc with the pH levels in soil, among other things. This cypress and the spider plants, which grow like weeds, are the only things growing at the moment. How much of a project would it be to fix up the soil so that I could plant some of my young bonsai in the ground...or could you even fix it? We live near the beach so the soil is very sandy indeed.

Sorry, I forgot to mention that we're in the Fall/Winter season now, with night temps getting around 11C. It doesn't get past 0C usually in the Winter...but perhaps I should wait until Spring?
