IMO Wisteria's are used in bonsai mainly for their magnificent flowering. I haven't seen too many styled in traditional forms but a lot style in a weeping form. In Australia they are very strong growers. Not sure when the best time to dig them out is though.

If you do go ahead and dig this up you should let it grow untouched and see what natural form it develops. I personally would remove the two twisting trunks.
