Native oaks are another option. WIllow oak (quercus phellos) and Texas live oak (quercus virginiana, var. fusiformis) are both terrific bonsai candidates and hardier in your area than Q. suber or Q. Robur (English oak).

The larger leaved native white and red oaks are problematic in bonsai cluture, as they tend to retain huge leaves, which actually sometimes increase in size under bonsai culture.
