Black Olives due to tend to have their leaves turn tan, when they are used up, or are attempting to acclimate themselves to a new lighting condition..
I have never seen my two Black Olive's leaves turn brown, though. I have no idea about the crystal-like substance.
Moving your tree to different locations, in my humble Opinion is not a very good idea. Even when I bring my tree in from the out doors, for the winter, I had very little leaf drop, in fact my tree put out an unusual plethora of flowers.
