Bart,
There are two ways to prevent too large of leaves during an exhibit:
1. defoliate the tree and display it bare of leaves. This would require very tight ramification.
2. defoliate the tree a couple of weeks before the exhibit so that the new foliage has not completely matured causing them to be much smaller.

The final height of the tree will be more or less the height that you see right now. I believe that is about 4 to 5 inches.
