All the methods you describe will work to make a suitable bonsai. The differance being "your" patiance level. If you can wait, many people find it suitable to start from seed so they have more control. Other people may find a really nice nursery plant and are able to make a nice bonsai in a few hours. Growing out small stock in containers is done by every nurseryman in the US. This will also yeild suitable stock. You might think about starting your collection in varying phases of growth. Start some seed now for the future. Buy some small junipers at the nursery to practise with. And finally, spend a few dollars on a nice plant with some potential. This will give you some variation in size to prune on and will keep you from becoming bored as you collection grows. Seems I always need something to prune on.
