Jeff, these are really pretty "starters". I'd like to have these two myself!
I can't tell you what to do with them, but I do know what I'd do. Pretty much nothing, for probably two years.
I'd put them into grow boxes, with the intention of giving them time to establish new, compact root systems. I don't know what your root balls looked like, but I'd be surprised if the came up with anything like the flat, compact root pads they will to live in small pots.
I'm very cautious with trees that have significant size to them when they are initially collected, as these do. From what I've read, most growers are.
I do not know what species or variety these are. From their loooks, they are very suitable for bonsai.
