Hi paul,
I actually quite like the the two branches you are considering removing, they intoduce taper and look to have pleanty of shoots off them. If you got rid of them I think that you would reduce a siginificant feature of this tree. This is what i would once I thought the tree ready. Probably use photo no. 2 as the front, Jin/Shari the top of the main trunk, cut the two branches you want rid of back to different heights and then form an apex on each of them bringing them back over the centre of the tree. See my virt (simple) below. It would almost become an informal bunjin type design.

D3rutat, I personally wouldn't go for a cascade you'd have to do some serious bending and it would make more sense to choose something that lends itself easier.
