Your trees are definitely dormant at those temperatures. The trees that still have leaves may be cultivars or may have just decided to hang on to a few leaves for whatever reason. If they were outside the wind would have probably blown them off by now. You can clip them off as BN said or just let them fall on their own after the new leaves come in. All chinese elms will hold there leaves in warmer climates.
