If it keeps the soil from freezing, it should be fine. Here, I would just put it in an unheated greenhouse to modulate the nightime temperature a little, but it looks like you're colder.
Roots that form from layers in the first few months into the first year are usually pretty sappy, white and brittle. Later they will lignify a little and start to turn brown and they can tolerate more cold.
