I think I would keep the tree in the shade for a couple of weeks after defoliating it. Fukien Teas like bright light and warmth and never should they be allowed to dry out.
For the winter it will need a bright grow light, and temps near 80ºF to thrive. It is also temperamental to overfertilizing and insecticides. Use diluted soluble fertilizer. For insects, fungus etc. I have good success with Neem Oil and Fertiloam's Red Spider and Might Spray.
