Now that is a nice piece of material! I really wish I could find a source of prunus mume specimens like that one. I think with the deadwood carving that you propose and a couple of years of shaping, you'll have a really gorgeous tree.
I probably like the front shown the second picture the best (maybe rotated just a fraction more to the left, so that the deadwood is not so much front and center). But it's darn near impossible to pick a front for a tree from just a set of two-dimensional photographs, so take my comment with the requisite grain of salt.
