Roots in the ground stay cooler than in a pot for sure. But water does not flow any slower in the earth than in a pot depending of course on the type of soil.
Gravity is the same in the pot as it is in the earth.
Watering times are not dependent on pot temp but more the needs of the tree.
My trees do not spend enough time in the direct sun to get the pots overheated.
