Ginkgo can certainly be trunk chopped but depending on the thickness of the plant where the chop is done it can take years to heal over.
If you are going to do the chop, leave it till early spring as the buds start to swell, that will give it the best chance to start the healing process.
Also be aware that its best to cut just above the bud or smaller branch that will be the new leader.
Ginkgo are notorious for loosing branches so sometimes its better to pick a place where you have a number of buds or branches to give you more options.
