Pick the trees that live and thrive in Yorkshire of course...sounds simple doesn't it?
I'm originally from Yorkshire and started bonsai growing there - I found no problems with Common Elm, Beech, Larch, Scots Pine and Cotoneaster. Plus Common Juniper, Rowan, Hawthorn are ALL fine and can take a plenty of abuse.
Make sure you keep them well ties into the pots and watch out they will dry MUCH faster than in sheltered spot.
If you fancy maples, Field Maple can take wind - it's much less delicate than its Japanese cousins.
