Sydney summer and Japanese maples do not go well together at all.

Unless you are planning on showing the tree you can leave them to fall naturally. If you want to have an autumn colouring then you should take the burnt ones off (Defoliate) and let the tree give a fresh new crop of leaves that will colour up nicely.

Maples need morning ( summer) sun only here and shelter from hot winds.
