Hiya Hayley

I am also in Sydney and have Chinese Elms.
I keep them in full sun most of the day and I have had no problems.
I water them in the morning Every day in summer, and if it is hot, I water them again in the afternoon when I get home from work.

Luckily we have not had any of our normal summer hot westerly winds this year so they have not dryed out too much and get burnt.
