I guess you can stop watering your bonsai when it is dead. Like soltan said, watering is an art and you have to teach yourself. I could probably list 12 or 15 factors that determine a tree and pots transpiration / evaporation rate. I don't ever think it's a good idea to let a trees roots go dry, even in winter. My advise is to do a lot of web surfing, to read up on watering. Might try
