As has been asked where in the world are you?
To answer your question it helps to know. Here in Western Australia I will start defoliating my figs in about two weeks.
The reason for this is to increase ramification and to reduce the leaf size. Take the whole leaf off leaving the stem.
If i need a branch or part of the tree to lengthen, or thicken up I do not touch that part.
I do not do it till the night time temperatures stay above 15% celsius ( approx 40 farenheit ). I hope this helps .
