It has to do with the moist air around the tree.

When I pruned the jade bush outside in my backyard, the fallen branches sent out roots at the point of touching the moist ground. After a few weeks, all the cut branches were firmly rooted, just from touching the ground.

So, I think that the moisture in your air induced those roots, even though there is no soil touching them.
