Seed Stratification: Trident Maple

I was told to run them through hot water, then wrap them in a wet(not to wet) paper towel, and slowly move them up the fridge for 90-120 days.

Couple questions

1. Can I put them in the fridge any time of the year? and plant them any time of the year, or do they have to be planted during spring?

2. Do you ever continue to add water in the zip lock bag while it's in the fridge? Do you use a fungicide on the seeds and if so what is it and where do you get it?
