Surinam Cherry

hello everyone i have this surinam cherry i bought about 2 years ago, and over the winter i think the entire top of this tree died. It is getting sprouts toward the bottom of the trunk and i was wondering if anyone had any idea as to when i should chop this plant back to the new growth that is beginning. I am sure it should be done in steps and not all at once, but not sure when would be the best time. Or should i just let it grow for awhile then chop.. Thanks in advance
