G'day
I'm working on a Ilex Shilling, got the trunk where i want it, now working on making some foliage pads.
Get the branching how you want it when small and flexible as they get older are very brittle as other poster said.
Also would not be in a hurry to cut off unneeded branches as can make some nice jin/deadwood from them.
Have fun with it. Here are some pics. maybe can get some idea's.
