Hi artboy

Your hornbeam is a temperate, deciduous tree and it does need winter dormancy, which it won't find indoors. On the other hand it needs protection from getting much below freezing, so you can't put it outside either.

If you try to keep it inside it will either not lose its leaves or it will try to re-leaf itself if it already has. You should really talk to some bonsai club members in your area to find out about how they deal with your climate - which might be a coldframe, unheated garage, etc.
